White Chocolate – Berry Mousse Parfait

White Choco Berry ParfaitBerries are probably the fruits that I miss the most from my time living in France, that and Peaches. When it’s the season for berries, they are available everywhere. This one year, I rented a friend’s flat which was just across a “primeur” which is a fruits and vegetable grocer. On weekends, I would wake up to the voice of the grocer shouting out the fresh produce of the day and the price: “2 euros la barquette de fraises, 2 euros” (2 euros a bundle of strawberries, 2 euros). That was my queue to get up and buy my berries.

So when, I went grocery shopping the other day and found frozen berries on sale, I stocked up a lot because I use it for many things from desserts to my morning yogurt smoothie.

Summer is definitely here in the Philippines and it’s honestly very hot right now to actually turn on my oven. I have been coming up with non-baked desserts this past week and this is definitely a winner.  Here’s a quick dessert you can make to serve for Easter when the family gets together. I used Orange liqueur but if serving to kids you can substitute it with orange juice if you prefer.

Since my cup was small, I used the berry as a garnish as well as the oatmeal crumbs. Which ended up making the parfait much more attractive.

Ingredients
  1. Oatmeal-Graham Crumbs
  2. ¾ C – Graham Crumbs
  3. ¼ C – Melted Butter
  4. 2 Tbsps – Brown Sugar
  5. 1 tsp – Sea Salt
  6. ¼ C – Quick Cook Oatmeal
  7. 2 tbsps – Shredded Coconut
  8. White Chocolate Mousse
  9. 2 C –All Purpose Cream or Whipping Cream, chilled
  10. 180 g – Melted White Chocolate
  11. Berry Mix
  12. 1 C – Frozen Mixed Berries
  13. ¼ C – Orange Liqueur (Cointreau)
  14. 2 Tbsps – Brown Sugar
  15. ¼ C – Water
Instructions
  1. Berry Mix
  2. In a medium sauce pan on low heat, place all the berries and the water and brown sugar.
  3. Once the fruits are thawed out, add the orange liqueur and let it simmer until the juice becomes a thick sauce.
  4. Let it cool before using it.
  5. Oatmeal – Graham Crumbs
  6. Mix the graham crumbs with the melted butter, brown sugar and sugar until it resembles wet sand.
  7. In a medium size pan on medium heat, place the oatmeal and the coconut for 3 minutes. Add the graham mixture and let cook for 5 minutes. Keep an eye on the mixture you don’t want it to burn, you just want to release the flavors of the ingredients.
  8. White Chocolate Mousse
  9. Melt the White Chocolate in the microwave on the lowest setting at 30 seconds increments, continue until the chocolate melts.
  10. In a stand mixer with the whisk attachment, whip the cream on medium speed until it has a fluffy texture. If you dip your whisk soft peaks will appear.
  11. Fold in the White Chocolate. Set Aside.
Assemble the Parfait
  1. Start by putting 2 tablespoons of mousse in the bottom of your glass and then add a thin layer of the berry mix (approx. 3 tablespoons). Top with layer of oatmeal-graham crumbs (2 tablespoons). Then repeat the steps.
  2. If you have similar containers like I mine which are short, I just added an extra layer of mousse and garnished it with berries and crumbs.
